Hey, it's Marco! Many of our foods (mostly beverages) today are pasteurized for one reason only and it has absolutely nothing to do with bacteria or destroying bacteria, but KILLING enzymes. Yes, killing enzymes (or spoilage microorganisms) for purposes of extending shelf life. This is the truth about pasteurization, at least in modern times. Now if I could only figure out how to pasteurize my kids underwear! LOL!
